Zucchini Pepperoni Grillers

The boys and I created these for a quick snack one day. We are hoping the zucchini holds out now so we can have them for many more weeks to come.

Zucchinis that are about 1.5 inches across are a good size for these, although you can go a little bigger.
Slice on the diagonal in 1/2″ pieces.
Sprinkle with a good garlic salt. I use McCormick’s SeaSalt Garlic in the little grinder bottle.
Put tiny bit of lower fat provolone, mozzarella, pepperjack cheese on the zucchini and top with 1 piece of turkey pepperoni.

Now..here’s where it gets tricky. We have a Cuisinart Griddler G-4 which is a grill and panini press. We LOVE it and use it every day. Lightly spray the griddler and turn to medium. Grill for just a few minutes. Some of the cheese may spill over and the pepperoni occasionally sticks to the top grill…but it easily flips off and onto the zucchini with your spatula.
Be careful. Right off the griddle these are very hot. Let cool a little bit. The zucchini will be crunchy/soft. :) Makes me want to make some right now!
