Progress from the garden

While it may seem that all I do is exercise and promote Beachbody and grow my Beachbody business at this point, I really do a whole lot more... as you can see! I use organic gardening methods to garden and these tomatoes were literally canned within hours of being picked fresh from the garden. And it makes me feel good that I can provide healthy, organic food for my family to eat during the winter. It's not always affordable to buy everything organic and quite frankly, not everything that says organic is necessarily good for you! Read my article on ezinearticles if you want more on that topic!

I canned these tomatoes with what is referred to as 'open kettle.' You won't find instructions in new canning books or county extension documents, but I've canned this way for years and learned it from a lady who had done it this way for 65 years! I don't water bath. I simply peel and put all tomatoes in a large, heavy bottomed pan. Bring to a 'boil' and simmer for at least 20 minutes. More if you want some of the water to evaporate. I have my jars clean and hot in boiling water. The rings and lids too. Then, when the tomatoes are ready, I removed a couple of jars from boiling water. Put in 1 t. canning salt and 1 t. white Heinz vinegar, put the tomatoes in within 1/3" of the top, wipe the jar, and seal. Again...only in the old books will you find this and it's not considered 'safe' today.
If I want whole tomatoes, then I do it more like the canning books which is to put the peeled whole tomatoes in the jar, smush down to remove air bubbles, add salt and the process in a hot water bath for the recommended time.
Salsa, because you are including other ingredients, needs to be water bathed for sure!

Happy canning. The fall is almost here and before I know it I will pulling up the tomato vines and turning the compost and preparing the garden for next spring's planting!
